little e can't have eggs and i often feel like she's missing out on the wonderful world of breakfast. how much would i like sweety to enjoy a fluffy pancake, french toast or just plain scrambled eggs. morning breakfast for e usually consists of oatmeal with blueberries bananas and pear. flax is our family substitute for recipe's calling for egg which allows her to actually have many of the breakfast treats, but just not quite at their full eggy-yummy-potential. i decided to find a muffin recipe that included some healthy additives of blueberries, yogurt and flax. below is the recipe i found on epicurious. next time less sugar, but i can't say any of us were complaining. the muffins were a huge hit: perfect for the little one and for father's day!
{good morning muffins}
1/3 cup whole wheat flour
1/4 cup brown rice flour (recipe called for white flour)
1/2 cup organic cane sugar (recipe called for splenda)
1/4 cup ground flaxseed
1 tsp. cinnamin
1/2 tsp. baking powder
1/2 tsp. baking soda
3/4 cup frozen blueberries (recipe called for fresh blueberries, but i save those for her snacks!)
1/2 cup plain yogurt
1/4 cup brown rice flour (recipe called for white flour)
1/2 cup organic cane sugar (recipe called for splenda)
1/4 cup ground flaxseed
1 tsp. cinnamin
1/2 tsp. baking powder
1/2 tsp. baking soda
3/4 cup frozen blueberries (recipe called for fresh blueberries, but i save those for her snacks!)
1/2 cup plain yogurt
2 tbsp. oil
mix dry ingredients, then mix in wet ingredients, place in muffin tin and bake on 375 for 20 minutes
enjoy.
